We only offer this once per year because we like to honor the seasonality of these amazing animals. In the spring time they will be at the prime harvesting point. And our whole mission is to provide you with only the best.
I thought about carrying inventory for you all, but that would mean I would have to ship out meat that wasn't as fresh as it otherwise could have been.
